Is this some new kind of press or what? If it's not, then letting your coffee set for 7-9 min. will cause over extraction and the flavor will be bitter. The beauty of the press is that it lets all the coffee oils through and you end up with a very full flavor that is sweet. 4 min. is the magic number and there are much more interesting coffees out there besides House Blend. Try the Guatemala Antigua from Starbucks for a great next step from House Blend.

I should have also said that coffee is a deeply personal thing and you should make your coffee the way you like it. On the other hand, variety is the spice of life! Enjoy.

Now you've got me thinking... when I make coffee in the frenchy's press, it's hit or miss. and now that I think about it, it's miss when I try to do other stuff between pouring and pressing. perhaps i leave it too long. or, perhaps, after all this effort, i still just don't like coffee.
